Southern Utah and Las Vegas Have Many Charms

Here is just a tiny portion of what is available in these areas:

BEAVER–My husband swept me away to Cedar City, St. George, and Las Vegas for the weekend two weeks ago. We started our journey by dining in one of our favorite restaurants tucked quietly away in the shadows of Beaver, Utah. Located right off the highway, just west of all the traffic at 1800 South and 620 West. Seriously, for those in northern Utah who are driving down to Las Vegas or Disneyland or even the Shakespearean Festival in Cedar City, once you dine here you will always find your way back. The gourmet chef is so incredible that he teaches many locals the secrets to his master creations.

This trip led to a new discovery when we realized that they serve breakfast, lunch, and dinner. So as we journeyed home we made it a point to try it out. When we saw that they have lemon blueberry Liege waffles my husband and I could not resist! https://timberline-restaurant.net/menus/

When the waitress turned a corner and headed to our table the lemon scent wafted up and over our direction pretty quickly. We knew we were in for an incredible treat! As she delivered them to us we were surprised to see how big the blueberries were and amazed by the sugar crystals inside the waffles.

When we come for dinner we always order the appetizer of Sauteed Button Mushrooms and Artichoke Hearts in a hot oil and butter sauce which comes with the most amazing bread for dipping! We say we’ll be good and skip it, but somehow it always ends up on our order.

My favorite dinner menu is one that I cannot skip, even when I say I want to try something else. I always revert back to what I know and that is the Chicken Farfalle Pasta. The cream sauce is this delectable mesh of cream, garlic, and I think parmesan cheese or maybe Emmentaler. Whatever it may be it always tempts me with delight. The pine nuts add just the right amount of crunch.

Of course a trip to Beaver is never complete without a stop at the famous Beaver Cheese and Creamery which now uses the moniker simply The Creamery. That’s all you have to say to the locals and they know exactly what you mean. They have the best assortment of cheeses, delicious ice cream flavors that rotate every now and then, along with a grill where you can purchase sandwiches. There is also a great educational tool there for children where they can learn how to milk a cow and learn all about the cheese making process, namely the cheese curds or squeaky cheese as it is more commonly known. https://thecreameryutah.com/

CEDAR CITY–Cedar City also hides a phenomenal restaurant with gourmet food that we discovered on accident called Pork Belly’s. We were craving breakfast but it was also lunch time. Upon reviewing the menu we noticed that there were a bevy of breakfast items that could also be claimed as lunch. So as we explored the menu we solidified our choices. My husband ordered the tri-tip benedict which is eggs benedict with tri tip. I ordered my standard ham and cheese omelet which was anything but! I had the funeral potatoes as well which blew me away.

Rick and I ordered the French Toast on the side just to try and it was like a slice of caramel heaven. My biscuit was 3 times the size of a biscuit you get anywhere and the waitress brought out their homemade strawberry jelly which did not taste like strawberries. https://porkbellyseatery.com/ (as a side note Pork Belly’s has a location in St. George as well so do not fret if you can’t make it to the one in Cedar City).

Needless to say, next time you are in Cedar City make it a point to solicit a meal from Pork Belly’s then catch a show at the world renowned Shakespearean Festival. We saw their version of Clue and it was hysterical! LAS VEGAS—Las Vegas was memorable in its own way. Every building entices you to enter and explore its magic and charm. First we stopped off at the Venetian to see Derek Hough’s dance revival. It blew us out of the water! It has since ended but I hope he is able to return and perform there again. I know so many people would love to see him perform live.https://derekhough.com/

The next night we were privy to America’s Got Talent at the Luxor. Nothing can prepare you for this talented group! The death defying acts had us experience intense heart palpitations and the singing echoed just so beautifully. From the food to the entertainment, there was a lot to keep our senses overloaded and exploding with rapture. Thank you to all, but especially my amazing husband, for making it a great weekend!
